Hot sauce for salmon: cream, lemon, and chives

The simplest hot sauce for salmon is made right in the pan: shallots, cream, lemon, and chives. Plus, a quick beurre blanc as a bonus.

Hot sauce for salmon with cream, lemon, and chives, served in a cast-iron skillet under a pergola

The easiest hot sauce for salmon is made in the skillet where you just cooked the fillets: one shallot, a splash of white wine, 20 cl of cream, lemon, and chives. It’s ready in 5 minutes—just enough time for the fish to rest.

In the evening, with the pergola slats closed and the space heater on, this is my go-to comfort food.

Ingredients for 4 people

  • 4 salmon fillets with skin, 150 g each
  • 1 tablespoon olive oil
  • 10 g of butter
  • 1 shallot
  • 5 cl of dry white wine or vegetable broth
  • 20 cl of whole liquid cream with 30 % fat content
  • 1 untreated lemon
  • 1/2 bunch of chives
  • Fine salt, freshly ground pepper

For 2 people, use the same skillet and halve all the ingredients: 2 steaks, 10 cl of cream, half a shallot.

Preparation: 10 min · Cooking: 15 min

The Step-by-Step Recipe

  1. Take the steaks out of the refrigerator 15 minutes beforehand, pat them dry with paper towels, and season the meat side. Finely chop the shallot and chives, zest the lemon, and squeeze half of it.
  2. Heat the oil in a large skillet over medium-high heat. Place the steaks skin-side down and press down on them with a spatula for 10 seconds to keep them flat.
  3. Let them cook for 5 to 6 minutes without touching them, until the flesh turns white about two-thirds of the way up. Flip them over and cook for 1 to 2 minutes, then set them aside covered with aluminum foil.
  4. Drain off the excess fat, lower the heat, and add the butter and shallot. Sauté for 2 minutes without browning. And no, my colleague, you don’t wash the pan: those pan juices are what give it its flavor.
  5. Pour in the white wine, scrape the bottom of the pan with a wooden spatula, and let it reduce by half, about 1 minute.
  6. Add the cream and let it simmer for 3 to 4 minutes, until the sauce coats the back of a spoon.
  7. Remove from the heat, stir in 2 tablespoons of lemon juice, the zest, and the chives. Season with salt and pepper, then return the steaks to the sauce for 1 minute, skin-side up so the skin stays crispy.

My Cooking Tips

  • Quick Beurre Blanc: Simmer 2 finely chopped shallots with 10 cl of dry white wine and 5 cl of white wine vinegar until the liquid is reduced to 2 tablespoons. Add 1 tablespoon of cream, then 125 g of very cold, diced butter, a little at a time, whisking over very low heat. Above all, it must never come to a boil.
  • Always remove the lemon from the heat: if heated, it becomes bitter and can cause the cream to curdle.
  • Light version: 15 % of cream thickened with 1 teaspoon of cornstarch mixed with a little cold water; otherwise, it will curdle.
  • For oven-baked salmon, prepare the same sauce in a small saucepan while the fillets bake for 12 to 15 minutes at 180 °C.

Under the pergola: how to serve

Basmati rice, fresh tagliatelle, or tender leeks pair perfectly with this sauce. In your glass, a white wine from Cassis or Bandol—in moderation: its freshness complements the lemon. Let’s get to the table before the sauce gets cold.

If you're having guests, prepare the shallot, chives, and lemon in advance: there's only a quarter of an hour of cooking left at the last minute. The sauce should be reheated over very low heat with a spoonful of water, but the salmon should be served just cooked.

Your Questions

What kind of sauce goes well with salmon?

When served hot, salmon pairs well with rich, tangy sauces: lemon cream, beurre blanc, hollandaise, or sorrel cream. When served cold or raw, it pairs best with a yogurt and dill sauce. Acidity is key—it balances the fish’s richness.

What sauce goes well with a salmon steak?

The lemon-cream-chive sauce in this recipe is the simplest and most popular. Pour it onto the bottom of the plate and place the steak on top, skin-side up: the sauce coats the meat, and the skin stays crispy.

What's the best sauce to serve with hot fish?

The classic French sauce remains beurre blanc, which originated in the Nantes region. It pairs well with all white fish and salmon. Its creamy version, which is more stable, is more forgiving of minor temperature variations.

What's the easiest fish sauce to make?

The one made right in the frying pan: a little cream, a squeeze of lemon, and some fresh herbs, simmered for 3 minutes. No need for an extra pot, and the fish juices provide all the flavor. Dill, parsley, or tarragon work very well as substitutes for chives.

Can this sauce be made with thick crème fraîche?

Yes, as long as you use whole cream. Mix it with 5 cl of water or broth, since it thickens quickly when heated. Avoid low-fat cream, which curdles when it comes into contact with lemon.
