Lemon Sauce for Asparagus: 3 Recipes, Served Hot or Cold

Lemon hollandaise for warm asparagus, or lemon cream or yogurt for cold asparagus: three simple sauces for both green and white asparagus.

Green and white asparagus topped with a lemon-flavored hollandaise-style sauce, served under a white bioclimatic pergola

The best lemon sauce for asparagus depends on the asparagus's temperature: a lemon hollandaise for warm asparagus, and crème fraîche or lemon yogurt for cold asparagus. All of them are based on the same trio of ingredients: lemon juice and zest, fat, and salt.

You know, in the fall I make this with green asparagus, served under the pergola as soon as the sun peeks through the slats.

Ingredients for 4 people (asparagus and lemon hollandaise)

  • 1 kg of green or white asparagus
  • 3 very fresh egg yolks
  • 3 tablespoons of cold water
  • 150 g unsalted butter
  • 1 untreated lemon, for juice and zest
  • 1 pinch of fine salt
  • 1 pinch of Espelette pepper or white pepper
  • Coarse salt for the cooking water

For 2 people, use 500 g of asparagus and a sauce made with 2 egg yolks, 100 g of butter, and the juice of half a lemon: if you use less than that, the emulsion won’t thicken properly.

Preparation: 15 min · Cooking: 20 min

The Step-by-Step Recipe

  1. Prepare the asparagus: snap off the tough ends of the green asparagus and peel the lower third if they are thick; peel the white asparagus completely, from the tip to the base.
  2. Cook them in boiling salted water: 5 to 8 minutes for the green ones, 12 to 18 minutes for the white ones, depending on their size. Drain them on a dish towel and keep them warm.
  3. Melt the butter gently, skim off the white foam with a spoon, and keep it warm. Grate the zest and squeeze the lemon.
  4. In a mixing bowl placed over a saucepan of simmering water—making sure the bottom of the bowl doesn't touch the water—whisk the egg yolks with the cold water.
  5. Whisk continuously for 4 to 6 minutes: the mixture will foam, thicken, and form a ribbon at around 65 °C. Remove it from the double boiler as soon as it coats the whisk; if it gets any hotter, it will turn into scrambled eggs.
  6. Remove from the heat, then pour in the warm butter in a thin stream while whisking, as if making mayonnaise. The sauce will become smooth and glossy.
  7. Add 2 tablespoons of lemon juice, the zest, salt, and chili pepper. Taste, adjust the seasoning, then drizzle over the asparagus just before serving.

My Cooking Tips

  • A sauce that stands out: Add 1 tablespoon of hot water and whisk vigorously. If it has really curdled, start over with a fresh egg yolk and gradually fold in the curdled sauce.
  • Chiffon version: Gently fold in 5 cl of whipped whole milk just before serving. It has a lighter texture and is perfect with white asparagus.
  • Quick Lemon Cream for Cold Asparagus: 20 cl of heavy cream, the juice and zest of half a lemon, 1 tablespoon of chives, salt, and pepper. Whisk for 30 seconds, and it’s ready.
  • Light Yogurt-Lemon Sauce: 300 g Greek yogurt, 2 tablespoons olive oil, the juice of half a lemon, 1 small clove of garlic, grated, and dill or mint.
  • Roasted green asparagus: Bake for 12 minutes at 210 °C with a drizzle of olive oil and some salt. They caramelize a little, and the lemon really brings out their flavor.

Under the pergola: how to serve

With hollandaise sauce, asparagus becomes a full-fledged meal: add some soft-boiled eggs or a pan-seared salmon steak, along with some country bread. A Cassis or Palette white wine pairs well with the lemon—to be enjoyed in moderation.

The hollandaise sauce is made at the last minute and doesn’t keep: 10 minutes of whisking while your friends settle in—it’s no big deal. The cream and yogurt sauce can be prepared up to 24 hours in advance, and the asparagus can be cooked in the morning. Under the bioclimatic pergola, we can enjoy the late-season sunshine without having to rush around the kitchen.

Your Questions

How do you make a simple lemon sauce?

Mix lemon juice and zest with a fat: melted butter, cream, olive oil, or yogurt. Season with salt and pepper, and add a fresh herb. The quickest option is lemon-flavored crème fraîche, which is ready in 30 seconds.

What's the best sauce for cold asparagus?

Choose a sauce that’s served cold: lemon cream, lemon yogurt, mayonnaise, or vinaigrette. Hollandaise, on the other hand, is best enjoyed warm and thickens when chilled. For a lighter option, Greek yogurt is unbeatable.

What sauce goes well with white asparagus?

Mild and slightly bitter, they pair well with creamy sauces: mousseline, hollandaise, or lemon cream. The green varieties, which have a more herbaceous flavor, pair better with tangy sauces like yogurt-lemon. Lemon serves as a bridge between the two.

Can you make hollandaise sauce ahead of time?

Not really: it should be served within an hour, kept warm in a double boiler, off the heat. It shouldn’t be reheated or stored, because the egg yolks are barely cooked. If you want to plan ahead, go for the lemon cream instead.
