For grilled salmon, the ideal sauce is a warm Provençal vinaigrette: diced tomatoes, black olives, capers, shallots, and basil, simply warmed in olive oil. Light and cream-free, it adds the acidity and aroma that enhance the smoky flavor of the grill.

Ingredients for 4 people

  • 4 salmon fillets with skin, 150 g each
  • 1 tablespoon olive oil for cooking
  • 3 very ripe tomatoes, about 350 g
  • 1 shallot
  • 12 black olives from Nice or Nyons, pitted
  • 1 tablespoon capers
  • 1 clove of garlic
  • 1/2 bunch of basil
  • 10 cl of extra virgin olive oil
  • The juice of half a lemon
  • Fleur de sel, freshly ground pepper

For 2 people, halve all the quantities and use just one large tomato.

The Step-by-Step Recipe

  1. Score the skin of the tomatoes in a cross pattern, plunge them into boiling water for 30 seconds, then into ice water. Peel them, remove the seeds, and dice the flesh into 5-mm cubes.
  2. Finely chop the shallot, slice the olives into rounds, coarsely chop the capers, and crush the garlic clove with the flat side of a knife.
  3. In a small saucepan, combine the olive oil, shallot, olives, capers, and garlic. Heat for 4 to 5 minutes over very low heat: the oil should become warm and take on the flavors of the other ingredients, but never fry.
  4. Remove the garlic from the heat, add the tomatoes and lemon juice, and season with salt and pepper. Keep the saucepan on the edge of the grill so the sauce stays warm.
  5. Heat a cast-iron grill, a plancha, or the barbecue over high heat. Pat the steaks dry, brush them with oil, and season them lightly with salt.
  6. Place them skin-side down and let them cook for 4 minutes without touching them, then flip them over and cook for 2 to 3 minutes. The flesh should remain pearly white in the center, with an internal temperature of around 50 °C.
  7. Add the chopped basil to the sauce at the last minute. Arrange the steaks on the plate and spoon the virgin olive oil over them.

You can chop the tomatoes, olives, and shallot 2 or 3 hours in advance and keep everything refrigerated, then let it come to room temperature at the last minute.
